AirCasting: Gadgeteer External Device
Happy to hear you we're able to get everything working. Also note that while actively recording a session you can toggle between sensor streams by a) pressing the "eye" icon on the "Sensors Dashboard" screen; or b) pressing the "Avg", "Now", or "Peak" circles and selecting a sensor from the list.

AirBeam2 - zero or close to zero PM (1, 2.5 and 10) readings
Sounds like the air you're measuring doesn't contain much particle pollution. If you'd like to test the response of the AirBeam2 to particulate matter burn some paper.

Aircasting App
I just downloaded the AirCasting App to read PM2.5 data out of the Shinyei PM sensor. The app is able to connect to the app in my phone. The app is able to detect my phone microphone as one of the sensor option, but not the Arduino Shinyei sensor.

Any help would be very appreciated.
